A fabulous Champagne Method Sparkling wine made from Chardonnay only  (would be 'Blanc de Blanc' in Champagne) Hand-picked and developed over 18 months in bottle.

Fresh, lemony nose. Creamy mouthfeel with fine bubbles. Orange peel notes with a fresh and complex finish.

ABV 12%

5g of residual grape Sugar (in Sparkling terms can be called "Extra Brut"

Hand harvested from 2ha of 25-year-old vines

The Terroir New Appellation recognised from February 2017 AC Champtoceaux Near Ancenis in the Loire Valley just 40km inland from Nantes. Mica-Schist Soils

Fermentation Cool Temperature fermentation over 3 weeks followed by 5 years on the Lees (Sur-Lie)

Description Grapes Melon de Bourgogne - 35 Year old Vines from just 1 ha of production. Powerful Nose of Acacia honey, Smooth powerful and mineral on the palate with a brioche flavour.
